New Chesikaki Factory is owned and operated by the New Chesikaki Farmers Cooperative Society (FCS) in the Western region of Kenya. This factory supports as many as 5,383 farmers, offering crucial services such as agricultural inputs, training and marketing support to ensure the production of high-quality coffee. Located in Bungoma, the area is known for its favorable climatic conditions and rich soil, contributing to the exceptional quality of the coffee produced. The unique processing methods at the factory, including the use of raised beds for drying, enhance the distinctive flavor profile of this coffee.
Cherry is handpicked at peak ripeness to ensure the highest quality. At the New Chesikaki Factory, the cherry undergoes a fermentation process lasting 12 to 24 hours. Parchment is laid onraised beds to dry. This method reduces water usage and enhances the coffee’s natural sweetness and complexity. The drying process takes between 7 to 14 days, depending on weather conditions, ensuring even drying and optimal moisture content.
PB stands for peaberry. Peaberry is a name given to a very specific shape of coffee bean. In Spanish, peaberries are called “caracol”, which means “snail”. The name aptly describes the shape of the peaberry bean, which appears slightly curved in on itself.
