Over a century ago, Don Manuel Ariz left his native Galicia behind and arrived in Ahuachapán, El Salvador. There, he had the idea to invest in a small coffee farm — Villa Galicia — 13.5 hectares of clay soil.
Today, his great-grandson Mauricio Salaverría continues the family tradition, managing six small farms located at altitudes between 1,300 and 1,600 meters. Mauricio has mastered various processing methods, and his coffees have won the Cup of Excellence in 2011, 2013, and 2015.
Mauricio is known for producing microlots of extraordinary quality. He stands out for his commitment to innovation, environmental sustainability, and fair working conditions for his employees.
THE FARM
Himalaya Farm is a farm located at 1,600 meters above sea level, in the high hills of a region known as the „Ruta de las Flores“ (Flower Route). It is mainly planted with Gesha and other exotic varieties. Himalaya’s clay and volcanic soil composition contributes to producing high-quality coffees, awarded at the Cup of Excellence competition.
But what truly sets it apart is its natural processing method. The result is an exceptionally clean cup, with depth and fruity complexity.
